Tomato Sauce

Roasted Garlic and Tomato Basil Sauce

INGREDIENTS:

3 heirloom tomatoes, diced into smaller pieces
1 pint cherry tomatoes
4-6 cloves garlic, skin on
1/2 white onion, quartered
8 basil leaves
2 tbsp + 1 tbsp Masseria Organic Extra Virgin Olive Oil
Salt and pepper to taste

DIRECTIONS:

  1. Preheat the oven to 450°.
  2. In a large cast iron skillet or baking dish, add tomatoes, garlic, onion, and basil. Drizzle 2 tbsp olive oil and sprinkle with salt and pepper.
  3. Toss to coat then bake for 40-45 minutes stirring halfway.
  4. Remove from the oven and let cool for 10-15 minutes.
  5. Carefully remove the skin off the roasted garlic. In a blender or food processor, add roasted tomato mixture.
  6. Blend until smooth drizzling with 1 tbsp olive oil to thicken the sauce.

Makes about 5 cups of sauce.
