Aioli
Roasted Garlic Aioli
PREP 15 MIN | COOK 60 MIN | SERVES 4
INGREDIENTS:
3 heads garlic, cut in half width-length
1 cup + 3 tbsp Masseria Extra Virgin Olive Oil
1 egg
2 tsp white wine vinegar
2 tbsp lemon juice
1 tsp sea salt
Cracked black pepper to taste
DIRECTIONS:
- Preheat the oven to 350 F.
- Add cut garlic heads to a piece of foil. Drizzle with 3 tbsp oil and wrap tightly in foil. Bake on a small baking sheet on the middle rack for 1 hour or until the garlic is roasted and tender.
- In a tall container, add egg, vinegar, roasted garlic (remove garlic peel), salt, lemon juice, then lastly add olive oil. Let settle for 30 seconds because using the immersion blendering to emulsify. Hold the blender at the very bottom for 15-20 seconds because incorporating the oil from the top.
